So let&#8217;s begin!<\/p>\n<p><strong>Kape\u0161ante of Novigrad<\/strong><\/p>\n<p>This type of shellfish is a real treat for all seafood lovers. It is actually a highly prized type of scallop whose incredible taste is the result of sea water and fresh water mixing in the Novigrad Bay. There are various ways of preparing this shellfish, and you can try them all at the <a href=\"https:\/\/www.istra.hr\/en\/events\/18011-ch-0\">Days of Shellfish<\/a> in north western Istria.<\/p>\n<p><strong>\u010cripnja<\/strong><\/p>\n<p>\u010cripnja is the name for a round tin or clay pan under which various dishes are prepared on an open hearth. The preparation of dishes under \u010dripnja is the Istrian version of a similar traditional cooking practice from other parts of Croatia. Various other main ingredients are added to this base, for example corn, sauerkraut, barley, fennel, etc. In the wide range of different flavours, you will surely find a type of mane\u0161tra that you will want to make at home, too.<\/p>\n<p><strong>Pljukanci<\/strong><\/p>\n<p>Pljukanci is one of several types of traditional Istrian pasta. It is prepared from flour and eggs, and its characteristic spindly shape is the result of a very simple process &#8211; rubbing dough between the hands. You can try this delicious pasta in combination with various traditional sauces, made with ingredients such as asparagus, truffles, porcini mushrooms, various types of stews, but also in a simple version with olive oil and sheep&#8217;s cheese.<\/p>\n<p><strong>Kro\u0161tule<\/strong><\/p>\n<p>This traditional dessert is an indispensable part of every Istrian celebration.
