A short dictionary of Istrian cuisine

Every region has its own traditional cuisine, which is always worth trying when you find yourself in a new place. We have already written about Dalmatian culinary treasures on our blog, and now it is the turn of perhaps less well-known delicacies of Istrian cuisine. So let’s begin!

Kapešante of Novigrad

This type of shellfish is a real treat for all seafood lovers. It is actually a highly prized type of scallop whose incredible taste is the result of sea water and fresh water mixing in the Novigrad Bay. There are various ways of preparing this shellfish, and you can try them all at the Days of Shellfish in north western Istria.

Čripnja

Čripnja is the name for a round tin or clay pan under which various dishes are prepared on an open hearth. The preparation of dishes under čripnja is the Istrian version of a similar traditional cooking practice from other parts of Croatia. When you visit Istria, be sure to try bread, meat or fish prepared in this way and experience the amazing flavours of traditional Istrian delicacies.

Fritaja

This type of omelette is prepared with various seasonal ingredients such as asparagus, truffles, various other mushrooms, sausages, prosciutto, and the like. The lovely smell and rich taste of a fritaja will surely satisfy even the greatest of gourmets.

Brodet

Although it is primarily associated with Dalmatia, brodet is also traditionally prepared in Istria. This fish dish, rich in flavours, is originally made from at least seven types of fish. Additional ingredients include shellfish, wine, tomatoes, garlic, but also herbs such as laurel, parsley, and sage. The exquisite flavours and aromas of brodet will surely remain in your memory for a long time.

Maneštra

Maneštra is a traditional Istrian thick soup made from potatoes, beans, and dried meat. Various other main ingredients are added to this base, for example corn, sauerkraut, barley, fennel, etc. In the wide range of different flavours, you will surely find a type of maneštra that you will want to make at home, too.

Pljukanci

Pljukanci is one of several types of traditional Istrian pasta. It is prepared from flour and eggs, and its characteristic spindly shape is the result of a very simple process – rubbing dough between the hands. You can try this delicious pasta in combination with various traditional sauces, made with ingredients such as asparagus, truffles, porcini mushrooms, various types of stews, but also in a simple version with olive oil and sheep’s cheese.

Kroštule

This traditional dessert is an indispensable part of every Istrian celebration. Simple ingredients (flour, eggs, sugar, cream, and brandy) and simple preparation (deep frying) give this desert a wonderful texture and an unforgettable taste.
